I always ask the butcher, to prepare me one whole one with the bone intact. And please leave some of the fat in it. It will give it a lot of taste.
1 Leg of Lamb Cleaned of Almost All the Fat.
1 Head Garlic
2 Tsp. Fresh Ground Pepper
1 Tsp. Garlic Powder
2 Tsp. Ground Cumin
1 Tsp. Paprika
1 Cup. Olive Oil
5 Spring Fresh Rosemary
Cut slits into leg and fill them with 15 Cloves of garlic.
Mix oil, rest garlic teeth crushed , rosemary and the rest of the spices..
Place in a pan cover with aluminum foil. Bake for 1:40 hr in preheat oven.
Uncover and continue roasting for another 15 minutes foe the leg to brown.
