First time i ate it was with my parents when we traveled to Marseille, France. WOW !!! Since then i make it as often as ii can. if you can get fresh beef nouns to make your broth it is the right way to make it. Otherwise store bought beef broth works as well . just get a good quality one
8 L Onions Sliced Thin
100 Grms. Sweet Butter
1/4 Cup Olive Oil
1 Tsp. Suger
2 Tsp. Chopped Thyme
2 Cups Beef Broth
1/4 Cup Brandy
8 Slices Gruyere Cheese
8 Slices French Bread
Salt And Pepper To Taste
Melt the butter and the oil, add the onions and cook almost until they are pale brown.
Add the thyme, broth, salt, pepper and brandy and bring to a boil. lower to shimer for 40 minutes.
Ladle into soup crocks, place a piece of bread on top and cover with cheese.
Place under the broiler until cheese melts.
