Carrot cake with a special ingredient.
2 cups of white flours
2 table spoons baking powder
1⁄2 teaspoon of baking soda
2 teaspoons of cinnamon
4 large eggs
1 1⁄2 cups of sugar
1 1⁄2 cups of canola oil
2 cups of grated carrots
220 grams of drained pineapple pieces (7.8 oz)
1 cup of golden raisins
1⁄2 cup of chopped pecans
In a medium bowl, sift flour, add baking powder, baking soda and cinnamon.
In a food processor beat the eggs and sugar for 2 minutes.
Gradually add in the oil.
Add the flour mixture slowly until it is blended.
Add the rest of the ingredients and mix well.
Pour the batter into a greased and floured pan (with a whole in the middle).
bake for I hour at 180 degrees (F 350).
